ABOUT Kadhai chicken RECIPE

Kadhai chicken is a very famous non-veg delight in restaurants. This spicy and yummy North Indian receipe tastes juicy, cooked in a red gravy with distinct flavours of whole spices. This receipe cooked in a thick bottomed wok called Kadhai in India. It tastes great with Indian naan, chappati's or even with rice also. Check out this tasty home preparation. Ingredients Serving: 4

  1. Chicken 1 kg
  2. Vinegar 1 tbsp
  3. Sliced onions 5 medium size
  4. Grated ginger 2 tsp
  5. garlic paste 1 tsp
  6. Garlic minced 5-6 cloves
  7. Chopped tomato 2 medium size
  8. Red chilli 4-5 or you can use green chillies as well
  9. Mustard Oil 2 tbsp
  10. Refined oil 1 tbsp
  11. Bay leaves 2
  12. Cumin seeds 1 tsp
  13. Green cardamom 2
  14. Black Cardamom 1
  15. Cloves 3-4
  16. Hing a pinch
  17. Salt to taste
  18. Turmeric powder 1 tsp
  19. Kashmiri mirch powder 1 tsp
  20. coriander powder 1 tsp
  21. black pepper powder 1 tsp
  22. Cumin powder 1 tsp
  23. Garam masala powder 1 tsp
  24. Crushed kasuri methi leaves 1 tsp
  25. Chopped coriander leaves

Instructions

  1. Put vinegar in the chicken pieces and set aside for 10 mins so that raw bone smell of chicken goes off.
  2. Then wash and drain the chicken pieces. Add some salt and keep aside.
  3. Now heat mustard oil in a Kadhai put cumin seeds, when they splutter add bay leaves, hing, whole red chilli, green & black cardamoms, cloves.
  4. Then add ginger and minced garlic, sliced onions and saute.
  5. After some time when the onions turns into brownish then add 1 chopped tomato add saute.
  6. Now it's time to add salt, turmeric powder, coriander powder, black pepper powder, cumin powder, red Chilli powder and mix well. Put 1/2 cup of water in it.
  7. Cover with the lid and turn the flame on low for 5mins.
  8. When the oil separates, time to place the chicken pieces in it and mix well. After 5mins add 1 more chopped tomato and the garlic paste, mix well and cover the lid.
  9. After sometime when the chicken is cooked add 2 cup of water or according to your need.
  10. Add crushed kasuri methi, Kashmiri mirch powder & Garam masala powder in it.
  11. Switch off the heat and let it stand for 5 mins. Sprinkle Coriander leaves and serve hot with the chappati or rice.
