Ingredients Serving: 8

  1. Potatoes (Aloo) 1 kg medium size
  2. Magaj paste 1/2 cup
  3. Poppy (posto) paste 1/2 cup
  4. Dryfruits( cashew, Kismish, almonds) paste 1/2 cup
  5. Peppercorns 1 tsp
  6. Cumin paste 1 tbsp
  7. Milk 1/2 cup
  8. Sugar 1 tsp
  9. Green Cardamom 2-3
  10. Black Cardamom 1
  11. Cinnamon 1 inch
  12. Grated ginger 1 tbsp
  13. Tomato puree 1 cup
  14. Turmeric powder 2 tsp
  15. Kashmiri red mirch powder 1 tsp
  16. Coriander powder 2 tbsp
  17. Kasuri methi leaves 1 tsp
  18. Salt to taste
  19. Hing
  20. Garam masala powder 1 tsp
  21. Oil 5 tbsp
  22. Ghee 1 tsp

Instructions

  1. Boil all the potatoes and peel them off.
  2. Then ready all the pastes like posto paste, cumin paste, Magaj paste, dry fruits paste and tomato puree.
  3. Cut potatoes in two parts, heat oil in Kadhai fry all the potatoes like little crisp add salt and turmeric. After that keep aside.
  4. Then heat oil in a Kadhai put cumin seeds, bay leaves, hing, sugar and peppercorns. Once they splutter add all the paste except tomato. Cook on high flame.
  5. Stir well. Put salt, all the spices powder mentioned in ingredients and grated ginger.
  6. Now add tomato puree in it. Mix well and cover them for few minutes on low flame.
  7. Cook until the oil seperates. Add milk and kasuri methi in it. Now put all the fried potatoes in it and mix well.
  8. Cover them for 3-4 mins.
  9. Atlast drop some ghee, Sprinkle some salt and Garam masala powder in it. Give a good mix.
  10. Ready to serve hot with the naan and puri.
