A bengali mixed vegetable dish often accompanied with khichdi

Ingredients Serving: 2

  1. Potato peeled & cubed 1 large
  2. 1/2 cup Cauliflower florets
  3. 1/2 carrot peeled & diced
  4. 1/2 raddish diced
  5. A handful cauliflower florets
  6. Panch phoran [this is a mix of 5 spices that is cumin seeds, mustard seeds, fennel seeds, fenugreek seeds and onion seeds] 1 tsp
  7. Salt to taste
  8. Mustard paste 1 tbsp
  9. Red chilli powder 1tsp
  10. Mustard Oil 1 Tbsp

Instructions

  1. In a pan heat mustard oil
  2. Add dried red chilli and panch phoron
  3. Add grated ginger n mix. Add 2 tsp water to avoid sticking of ginger
  4. Add the potatoes and turmeric powder. Mix and saute for 2 to 3 min
  5. Add rest vegetable one by one ending with the leaves. Add chilli powder
  6. Add salt and sugar. Mix. Add 1/2 cup water and mix . Cover and cook for 3 to 5 min.
  7. Add the mustard paste.mix well. Cook for 3 min.
  8. Rrmove from fire. Let it sit for 15 to 20 min before serving
