When it comes to healthy eating, what better could it be than eating all stir fry vegetables, which are rich sources of Vitamins and essential nutrients. Add some Sprig Malacca which is a blend of fragrant Herbs along with Oriental pices and your complete meal is done. This takes care of your day nutrition post Lunch/Brunch. So let us see a simple healthy recipe which all of us can use for a Fit and healthy body. Since Stir fry vegetables originated from the Chinese Cuisine, I am attributing this dish to them but we can make additions and curate the recipe our way to make it more healthy and suited for our climate.

Ingredients Serving: 4

  1. Bell pepper Red – 1
  2. Bell Pepper Yellow – 1
  3. Green Capsicum – 1-2
  4. Red carrot, medium – 2
  5. Broccoli - 250 gms
  6. French beans - 100 gms
  7. Mushrooms - 5-6 medium button
  8. Lettuce - 100-150 gms approx
  9. Zucchini – 1/2
  10. Garlic pods, sliced – 8-10
  11. Cherry Tomatoes – 8-10
  12. Baby Corns – 4-5
  13. Onions, Medium -2
  14. Olive Oil – 2 tbsp
  15. Sprig Malacca Spice blend - 2 Tbsp (the entire 30g pack)
  16. Red chili flakes - if needed for extra spice
  17. Salt – as needed
  18. Black pepper – if needed for extra spice

Instructions

  1. Wash and Chop all vegetables. Keep aside.
  2. Heat some Olive oil in a pan and add the garlic and onions. ( I have used onion powder instead of onions)
  3. Saute for two minutes and add the carrots and Zucchini.
  4. Saute these for some more while, say for about a minute or two then before adding the beans.
  5. Stir well and add the Black pepper, salt and red chili flakes. ( Since I like spicy stir fry, I have added extra spice from begining, you can opt out if not needed.)
  6. Stir and add the Bell peppers, capsicum, baby corns and the cherry tomatoes and all other ingredients.
  7. Add the Sprig Malacca Spice blend - 2 Tbsp (the entire 30g pack)
  8. Stir very gently and cover with a lid.
  9. Cook on a low flame for a minute and shut off the gas stove.
  10. Serve hot garnished fith small florets of broccoli and spray some more extra virgin olive oil.
