Cauliflower is grated into a rice like  bits and it resembles couscous and its a healthy twist on taking fried rice…Its light and fluffy and can be made quickly in minutes if you have everything ready….

Ingredients Serving: 2

  1. 1 cauliflower
  2. 1 chicken breast diced
  3. 1/2cup chips carrots.
  4. 1/4cup spinach leaves
  5. 2 tbsp Soya sauce
  6. 1 tbsp redchilli sauce
  7. 1 tsp pepper powder
  8. 1 tsp chopped garlic
  9. 1 tbsp sesame seeds
  10. 2 tbsp oil
  11. Spring onion greens
  12. Salt to taste


  1. Remove all leaves and cut the cauliflower into small florets.
  2. Place the florets in a food processor and blend until they are a rice-like texture. Be careful not to over process or it may turn mushy.Set aside, and drain excess moisture with a towel, if desired.
  3. In a pan add oil, chopped garlic then add and saute the chicken with salt and pepper..then add the carrots,spinach leaves cook it till they are crunchy..
  4. Then add the soy sauce, redchilli paste saute it well .
  5. Stir until most of the liquid has reduced, then add the cauliflower rice. Cook for about 3-4 minutes until the vegetables and chicken are incorporated evenly into the cauliflower.
  6. Spread the rice towards the edge of the pan, Pour the beaten eggs into the well, stir the eggs until they are cooked.
  7. Fold the eggs into the rice, then mix in the sesame seeds.and finally garnish with spring onion greens Serve!
