Ingredients Serving: 1

  1. 1 cup of basamati rice
  2. cauliflower florets 1 and half cup
  3. anar dana [pomegranate seeds] 1 cup
  4. Grated ginger 1tsp
  5. Herby seasoning 1 tsp italian spices
  6. Spring onion scallions 1 cup
  7. sugar
  8. salt
  9. oil 1tsp
  10. ghee 1tsp
  11. pepper corns
  12. cloves


  1. Wash the basamati rice and soak in warm water for 1hr. Then in a pan heat oil and ghee together, fry the peppercorns and cloves till aromatic.
  2. Next fry the cauliflower on medium flame. Cauliflower should be in a crumb form so give one pulse in the mixture. Add the grated ginger salt and sugar as per tase to the mix, then add the rice keep stirring with the cauliflower crumbs.
  3. Then add anar dana and the herby spices. Add one and half cup water and cook on medium flame for 15 to 20 mins. After the rice is cooked drain if any excess water. Add the peas and few anar dana. Add the scallions for garnish.
  4. Drizzle little ghee, sugar and pepper powder and the sauted califlower florets on top. Cover the lid to seal the aroma. Serve hot with chutney , papad or boiled eggs as shown in the pic.
  5. Note: Very light instant nutritious healthy lunch with protein and low calorie in one platter. Cauliflower with anar dana goes very well. Worth trying. Happy cooking.
