This recipe is fusion of indian and Italian flavour, a perfect side dish for dal rice or roti.

Ingredients Serving: 4

  1. 1 Italian baguette
  2. 4 bitter gourd karela
  3. 1 onion finely chopped
  4. 1 tbsp garlic finely chopped
  5. Salt and pepper to taste
  6. 2 tbsp finely chopped sun dried tomatoes
  7. 3 tbsp grated processed cheese
  8. 3 tbsp mozrella cheese
  9. 2 tbsp butter + 1 tbsp olive oil
  10. 2 tbsp butter for applying on bread
  11. 2 tbsp grated gur or brown SUGAR
  12. 1 tsp tamarind pulp
  13. 1 tsp paanch phoran
  14. 1 tbsp chilli flakes

Instructions

  1. Cut some slanting pieces of karela for crisp ..
  2. Now cut bitter gourd lengthwise and deseed it .
  3. Finely chop it and soak in salted water for 30 mins to get rid of my some of its bitterness
  4. After 30 mins drain it and and dry on kitchen towel..
  5. Now heat a pan to this add butter and olive oil. Then add panch phoran let it crackle then add garlic salute for few mins . Then add onion and saute till it becomes brown.. Now.add salt and chopped butter gourd.
  6. Let it cook with lid on
  7. Now add gur and tamarind pulp and check seasoning..
  8. Also add chilli flakes and processed cheese. This will bring the mixture together
  9. Mean while cut French baguette in slanting pcs and apply butter on it and roast in oven at 200 degree for 5 mins
  10. Now add karela mixture as topping on toasted bread .Add mozrella cheese on top and grill in preheated oven for 5 mins
  11. Sprinkle some chilli flakes and serve
