This bolu huli or coconut free Curry is sweet and sour. Good for health. It is fat free. It is common in Dakshina Kannada district. It's very easy.

Ingredients Serving: 3

  1. Bitter gourd medium 2
  2. Jaggery 1/2 cup
  3. Salt 3/4 tsp
  4. Water 4 cup
  5. Turmeric powder 1/4 tsp
  6. Tamarind lemon sized
  7. For seasoning .. mustard seeds 1/4 tsp
  8. Red chilly 1
  9. Garlic seeds 5_6
  10. Curry leaves 1 string
  11. Coconut oil 1 tsp

Instructions

  1. Wash cleanly the bitter gourd.
  2. Remove the inside seeds. Chop it finely.
  3. Now take a cup of water in vessel add these in that and let it be boil till the water completely evaporate.
  4. Now water is evaporated and bitter gourd is cooked
  5. Now take the pulp of 1 lemon sized tamarind, pour that to this vessel,and add remaining water.
  6. Now add turmeric powder.
  7. Add salt.
  8. Then add jaggery.
  9. Let it be boil in high flame 3-4 minutes.
  10. Now do the temper. Take a pan put oil a tsp. Heat it. Add mustard seeds and red chilly. While spluttering add cleaned garlic seeds and fry.
  11. When it turns golden brown add curry leaves and pour into the curry vessel. Mix well.
  12. Serve along rice or dosa.
