Ingredients Serving: 10

  1. For dhosa:- 2 cup rice,
  2. 1 cup urad dal,
  3. 1/2 cup chana dal,
  4. 25-30 seeds of methi Dana,
  5. sooji [semolina] - 1 tsp,
  6. salt to taste.
  7. For dhosa filling- aloo ki sabji which you usually make at home.
  8. For dal:- tuar dal - 1/2 cup
  9. Curry leaves - 10,
  10. ghee,
  11. 1 tomato,
  12. salt,
  13. turmeric powder - 1/2 tsp,
  14. hing [asafoetida] - 1/4 th tsp,
  15. rai [mustard seeds] - 1/2 tsp ,
  16. jeera [cumin seeds] - 1 tsp,
  17. red chilli powder - 1/2 tsp
  18. sugar 1/2 spoon,
  19. lemon juice 1/2 Spoon ,
  20. sambhar masala - 2 tsp
  21. For chutney:- coconut - 1/4 th cup
  22. lemon juice - 1 tsp
  23. green chilies -2
  24. roasted chana dal - 4 tbsp
  25. Curry leaves - 10
  26. salt

Instructions

  1. Dosa preparation:- take all the ingredients rice, chana dal, urad dal. Mathi dana in different bowls and wash all separately.Pour the water to each bowl and kept them aside for alleast 8 hours.
  2. After 8 hours drain the water and blend all the four ingredients into the jar and pour the mixture in a big bowl to let it fermented for the next 8 hours or keep the mixture overnight. You can add little water if u find it difficult in blending.
  3. Dosa: - After fermented add soji 1/2 cup so as to make dosa crispy. Add little salt according to taste and your batter for dosa is ready.
  4. For dal: wash tuar dal( 3-4 cups) , pour it into cooker, add pieces of tomato, jeera, kadi patta, salt, haldi powder, and add 3 cups of water to it. Let it cook until 3 whistles. Open the cooker and take a tadka pan- put ghee into it, add rai, let in crackel, red chilli powder, lemon juice , some sugar and Sambhar masala to it. After a boil pour this tadka into the dal and garnish it with coriander. Your dal is ready.
  5. For chutney : take a jar, cut the coconut into pieces put in into the jar, add soaked and roasted chana dal into it, some green chilies, salt, lemon juice, some red chilli powder , and kadi patta. Sprinkle little water. Blend everything to form a paste. Your chutney is ready.
  6. Now to make the dosa for this you need to Spread the batter evenly in the non stick pan, you can adjust the flame high to medium, flip it and spread some oil to make it shiner.
  7. Put aloo sabji at one end and fold the dosa as you like.
  8. Your masala dosa, dal and chutney is ready to serve.
