Ingredients Serving: 10

  1. Bottlegourd, grated, 3 cups
  2. Milk 500 ml
  3. Sugar 3 tbsp
  4. Cardamom, crushed, 4
  5. Ghee 3 tbsp
  6. Almonds, cashews, chopped 25g
  7. Frozen spring roll sheets 10-12
  8. Paste of 1 tbsp Maida + 1 tbsp water
  9. Oil/ghee to fry
  10. For sugar syrup (optional):
  11. 1/2 cup sugar
  12. 1/2 cup water
  13. Cardamom crushed 2
  14. Dried rose petals
  15. Lemon zest 1 tsp

Instructions

  1. Grate the bottlegourd and dry it with a kitchen towel to remove maximum water
  2. Take it in thick bottom pan with milk (preboiled or pasteurized) immediately or it will start to turn black
  3. Bring this mixture to boil on high heat and then turn flame to low
  4. Keep cooking with regular stirring till most of the milk evaporates
  5. Add chopped nuts and continue to cook till the mixture is almost dry and all the milk has evaporated
  6. After this, add the ghee and sugar and stir well (sugar will melt and mixture will become mushy)
  7. We need a very dry mixture as it is used in filling. Turn off heat and allow to cool in fridge for 3-4 hours as this will solidify it.
  8. In the meanwhile prepare chashni or sugar syrup using 1/2 cup sugar and water each Let it be slightly thin. Add 1 tsp lemon zest, cardamom and dried rose petals after it cools.
  9. Make paste with 1 tbsp maida and water
  10. Start preparation by heating oil or ghee for frying before you want to serve
  11. Take the square sheets. Put it in a diamond shape from you. Place filling at the bottom and start rolling. On reaching middle area fold both horizontal corners of the diamond inwards like an envelope. Continue to roll and stick the end with the help of maida paste.
  12. Fry them till golden brown on both sides (this takes about a minute only)
  13. Dab with paper napkin to remove excess fat,
  14. Serve hot with drizzled sugar syrup and more chopped nuts.
