ABOUT Armenian Rice Pilaf RECIPE

Rice pilaf of Armenia is common in their feast. This pilaf is rich with the flavor of butter and the nuts added to it. This rice can be served along with any spicy vegetarian or non vegetarian gravy.

Ingredients Serving: 6

  1. 1 cup long grain rice
  2. ½ cup vermicelli crumbled into 1 inch long pieces
  3. 1- 2tbs butter
  4. 2 cup vegetable stock
  5. whole spice – Bay leaf , cinnamon , cardamom , mace
  6. Salt to taste
  7. ¼ cup chopped almonds
  8. ¼ cup golden raisins
  9. ¼ tsp black pepper powder
  10. 1 tbs chopped pistachioas

Instructions

  1. Wash and soak the rice for 10 minutes.
  2. Heat a deep covered pan , melt the butter .
  3. Add the whole spices and fry in butter for a minute.
  4. Add in the vermicelli and roast till it is golden brown.
  5. Add in the soaked rice and sauté for two minutes.
  6. Add the vegetable / chicken stock and required salt and pepper.
  7. Adjust the seasoning while the rice is boiling in the stock.
  8. When the stock boils , simmer and cook for another 25 minutes or till the rice are cooked.
  9. Meanwhile , in a sauté pan , melt ½ tsp of butter , add almonds , pistachios and raisins . sauté till a nice aroma comes out.
  10. Add these to the cooked rice and mix gently.
  11. Armenian pilaf is ready to be served
