ABOUT Jerk Chicken RECIPE

A fragrant grilled and easy chicken recipe from Jamaica !!

Ingredients Serving: 2

  1. 2 chicken breasts
  2. 5-6 shallots
  3. 2-3 spring onions ( use the whites )
  4. 1/2 inch ginger
  5. 1/2 tsp chilli flakes
  6. 1 tsp peppercorns
  7. 1 1/2 tsp brown sugar
  8. 1/2 tsp honey
  9. 3-4 cloves
  10. 1 inch cinnamon
  11. 1/2 tsp allspice powder
  12. 1 green chilli (preferably hot)
  13. 1 tsp light soy sauce
  14. half of a lemon
  15. 1 tsp canola oil
  16. Salt to taste

Instructions

  1. Take all the ingredients ( except chicken ) in a mixer jar. Pulverize to get a fine paste
  2. Clean the chicken and put little cuts in the skin. Rub the spice paste all over the chicken preferably with your hands (wear gloves though).
  3. Pre-heat a oven to 250 degrees (Celcius). Put the chicken on a griller and place it in the middle rack of the oven with both the top and bottom heating elements switched on.
  4. Cook for 20-25 minutes or till it is done. Take care to regulate/lower heat because the marinade tends to burn easily as it contains sugar/honey.
  5. Serve hot with some lettuce, sliced carrots and blanched tender beans.
