Healthy oats flour bread sticks flavored with Sprig Italian Genoa inspired from the book Artisan Bread in 5 Minutes a Day

Ingredients Serving: 5

  1. Oats flour 3/4 cup
  2. All purpose flour 3/4 cup
  3. Water 1/2 cup + 3 tbsp
  4. Instant yeast 3/4 tsp
  5. Sugar 1 tsp
  6. Olive oil 1 tbsp + for greasing
  7. Sprig Italian Genoa flavouring 5-6 tbsp

Instructions

  1. To prepare oats flour, simply grind either rolled oats or quick cooking oats in a mixer
  2. In a large bowl, mix the oats flour, all purpose flour, instant yeast, sugar, salt and olive oil
  3. Add water to the bowl and mix with a wooden spoon till there is no dry flour left
  4. Grease a bowl with olive oil and transfer this dough to the bowl
  5. Cover and set aside for an hour or till the dough doubles in volume. It will be a little slow because of the addition of oats flour
  6. Punch down the dough and divide it into 10-12 pieces
  7. Preheat the oven to 200C for 20 minutes
  8. Line a baking tray with parchment paper
  9. Roll out each piece of dough into a circle like a roti
  10. Spread the Genoa mix on the rolled out dough leaving half an inch gap at the edges
  11. Roll the dough from one end to the other to form a tube like shape
  12. Pinch the dough together at the two ends vertically to seal
  13. Repeat the same procedure for each piece of dough till all are done
  14. Place the dough sticks on the baking tray leaving half an inch gap between 2 sticks
  15. Bake for 7-8 minutes or till the sticks are golden brown in colour
  16. Keep a close eye on the oven if you have rolled out the dough too thin
  17. Cool for 5-7 minutes
  18. Store in an airtight container for 3 days at room temperature
  19. Since these are flavoured bread sticks, they can be eaten as is without the accompaniment of any dip or sauce
