Healthy oats flour bread sticks flavored with Sprig Italian Genoa inspired from the book Artisan Bread in 5 Minutes a Day
It's really awesome...
To prepare oats flour, simply grind either rolled oats or quick cooking oats in a mixer
In a large bowl, mix the oats flour, all purpose flour, instant yeast, sugar, salt and olive oil
Add water to the bowl and mix with a wooden spoon till there is no dry flour left
Grease a bowl with olive oil and transfer this dough to the bowl
Cover and set aside for an hour or till the dough doubles in volume. It will be a little slow because of the addition of oats flour
Punch down the dough and divide it into 10-12 pieces
Preheat the oven to 200C for 20 minutes
Line a baking tray with parchment paper
Roll out each piece of dough into a circle like a roti
Spread the Genoa mix on the rolled out dough leaving half an inch gap at the edges
Roll the dough from one end to the other to form a tube like shape
Pinch the dough together at the two ends vertically to seal
Repeat the same procedure for each piece of dough till all are done
Place the dough sticks on the baking tray leaving half an inch gap between 2 sticks
Bake for 7-8 minutes or till the sticks are golden brown in colour
Keep a close eye on the oven if you have rolled out the dough too thin
Cool for 5-7 minutes
Store in an airtight container for 3 days at room temperature
Since these are flavoured bread sticks, they can be eaten as is without the accompaniment of any dip or sauce
