Ingredients Serving: 4

  1. Malaccan spice sponge
  2. 15gms Sprig Malacca spice blend
  3. 2eggs
  4. 65gms castor sugar
  5. 50gms all purpose flour
  6. 1/2tsp baking powder
  7. 25gms unsalted butter (melted and cooled)
  8. For ice cream
  9. 1/2 cup whipped cream
  10. 1/4 cup chilled milk
  11. 1/2 cup condensed milk
  12. 1 cup fresh coconut cream
  13. 1/4 cup of basil leaves juice
  14. Basil leaves to garnish

Instructions

  1. For Malacca spice sponge
  2. In a dry mixing bowl put two eggs and castor sugar and whip for 8 - 10 mins until the mixture turns pale and fluffy.
  3. In another mixing bowl seive all purpose flour and baking powder together.
  4. Now add the all purpose and baking powder mix and Sprig Malacca spice blend to the egg mix. Mix it well with the help of a spatula
  5. Add the butter and give it a stir.
  6. Pour in a greased pan
  7. Bake in a preheated oven at 180c for 15 minutes or until the surface turns golden and the toothpick comes out clean
  8. Soft and springy.
  9. For Ice cream
  10. For ice cream In a mixing bowl put the whipped cream and add milk and give it a stir.
  11. Now add rest of the ingredients and mix well with the help of a spatula
  12. Scrape down the mixture into a glass bowl with lid and freeze it for 4-5 hours or overnight.
