A simple recipe but when it comes to taste and visual appeal, i am sure your folks would love it. The stuffed capsicum recipe will make a a great addition to any dinner table, or even as an evening snack on its own. Recipe by Chef Pankaj Bhadouria.

Ingredients Serving: 4

  1. 3 Coloured Capsicums [bell peppers]
  2. 250 gms Paneer[cottage cheese]
  3. 1 tablespoon Green coriander Mint Chutney
  4. Few strands of Kesar[saffron]
  5. 2 tablespoon milk[for soaking saffron]
  6. Oil 1 tablepsoon
  7. Mustard seeds 1/2 teaspoon
  8. Nuts, chopped 1 taespoon
  9. 1 green chilli chopped
  10. 1 tablepsoon Desicated Coconut
  11. salt as needed
  12. 3 tablespoon Maida/All purpose flour
  13. 3 teaspoons of grated processed cheese
  14. Oil to shallow fry
  15. Tomato sauce/salsa to serve with
  16. Green Chutney to serve with

Instructions

  1. Take all the 3 coloured capsicums and slice them into medium thick rings.
  2. Clean and deseed it.
  3. Keep aside.
  4. Take paneer, crumble it and divide it into three portions
  5. Make three different stuffings adding three different mixes in the paneer.
  6. For making the first stuffing : in one portion of paneer add 1 tbsp green mint chutney and mix well
  7. Add 1 tsp grated cheese. Mix well.
  8. For second , soak few strands of Kesar in warm milk,
  9. Let it sit for 10 minutes
  10. Then add this to the second portion of crumbled paneer
  11. And add chopped nuts along with saffron and mix well.
  12. Add 1 tsp of grated cheese and mix well
  13. For third stuffing : take oil, in a small tadka pan
  14. Add mustard seeds,
  15. When it splutters, add chopped green chillies,
  16. Pour this tadka on 3rd part of paneer
  17. and add desicated coconut to it and mix it well.
  18. Add 1 tsp of grated cheese and mix well
  19. In this way make three different flavored stuffings ready.
  20. Add 1 tablespoon of Maida to each portion and mix well. Maida is used for binding.
  21. Add salt according to your taste in each portion separately
  22. Now take red colour bell pepper ring
  23. Fill in yellow saffron stuffing in it by pushing it to the corners and leaving center of it open
  24. Now in that open centre place green capsicum ring
  25. If the ring doesn't fit in just cut one portion and make it small
  26. Fill in white colour stuffing in this green capsicum ring
  27. Press it nicely
  28. Make remaining capsicum/bell pepper rings in 2 different colour rings with 2 different colour stuffings
  29. Now take a grill pan
  30. Put 2 tbsp oil and heat it
  31. Place stuffed capsicum rings and shallow fry them on medium to low heat
  32. Once it's done on down side just flip it on other side and shallow fry
  33. Take these out on serving plate
  34. Serve these capsicum rings with green chutney and salsa/ tomato sauce
