Ingredients Serving: 2

  1. 2 sweet potatoes boiled
  2. Mix boiled veggies like sweet corn, peas, shredded carrots about 2 tbspn
  3. Shredded cheddar cheese 2 tbspn
  4. A dollop of butter
  5. Salt, ground black pepper and mixed herbs
  6. Chopped olives
  7. A spoonful of tomato ketchup

Instructions

  1. Slit the boiled sweet potato in the center lengthwise with a knife and keep aside(if the size of potatoes are too long, you may choose to cut them into halves)
  2. In a non stick pan, melt the butter. Add the boiled veggies and saute for a while
  3. Add salt, pepper and mixed herbs and saute for some more time
  4. Now add the cheese and mix well. Switch off the stove before the cheese melts and starts to stick to the pan or turns brown
  5. Now take a spoonful of the mix and add to the sweet potato in the center carefully.
  6. Garnish it with olives and a spoonful of tomato ketchup
  7. Serve while the potatoes are warm
