Samai also called as little millet ,is #glutenfree whole grain , this millet which was feeding us for centuries which has numerous benifits..which our generation has totally forget. Benifits: *Samai is rich in phyto-chemicals and it has excellent antioxidant properties. *It reduces cholesterol and helps in digestion. *I tried out this MILLET PIZZA CRUST in a different way ..as i dint use samai flour instead i soaked samai overnight grind it into batter and used it. *This pizza is little dense and very filling. Yet light enough to digest brilliantly. I served with cheese ,spinach, onion and corn .. I am totally satisfied with the result.

Ingredients Serving: 2

  1. *1/2 cupminus 1tbspn samai , soaked for at least 8 hours, rinsed and drained
  2. *2tbspn- whole wheat flour.
  3. *1tsp- arrow root powder
  4. *2tbspn - 4tbspn of water
  5. *1tbspn- coconut oil
  6. *1/4tsp+apinch of salt
  7. *1tsp - Italian seasoning
  8. *1tsp - active instant dry yeast

Instructions

  1. .Soak the samai in water for at least 8 hours. Rinse and drain it. (If you plan this for dinner, just soak the samai in the morning or soak it overnight, rinse, drain in morning and put into a sealed container and keep in fridge till you get ready to make – this is what I did.)
  2. This step is very important as the recipe won’t work with dry samai.
  3. Add all the ingredients to a high-speed mixer and combine until the dough resembles pancake batter.
  4. Adjust the water as needed. Let it rest for 15-20min.
  5. Preheat your oven to 200 C and an 8-inch round cake pan with 11/2tbspn of coconut oil.
  6. Allow cake pan to heat up in the oven for about 10 minutes.

  8. Remove cake pan from the oven and immediately add the “dough,” using a spatula to even it out.
  9. Place the dough in the oven to bake for 15-20 minutes.take it out to check you can see the base shaking easily when you tap

  11. Flip the dough and bake for another 10 minutes, or until brown and crispy.

  13. Add whatever toppings you want .
  14. Bake at high temp till cheese melts and Serve hot and enjoy.
