ABOUT Homemade Bourbon Biscuits RECIPE

The Bourbon biscuit sometimes referred to as a Bourbon cream is a sandwich style biscuit consisting of two thin rectangular dark chocolate–flavored biscuits with a chocolate buttercream filling. The biscuit was introduced in 1910 by the biscuit company Peek Freans, of Bermondsey, London, originator of the Garibaldi biscuit. The new name was taken from the European royal House of Bourbon. The Bourbon biscuit is the fifth most popular biscuit in the UK to dunk into tea. In India , Britannia makes original Bourbon Biscuits, though there are various other companies that make similar ones using different names.

Ingredients Serving: 10

  1. All purpose flour 1 cup
  2. Powdered sugar 4 tablespoon
  3. Honey 1 teaspoon
  4. Cocoa powder 4 teaspoon
  5. Baking soda 1/2 teaspoon
  6. Unsalted softened butter 4 tablespoon
  7. Pinch of salt
  8. Milk for kneading 4 to 5 tablespoon
  9. FOR CHOCOLATE FILLING:
  10. Icing sugar 1/2 cup
  11. Cocoa powder 1 tablespoon
  12. Butter 3 tablespoon

Instructions

  1. Sift flour, fine sugar, baking soda, salt and cocoa powder together.
  2. Add softened butter and honey and dry mix to make a coarse like texture.
  3. Add milk gradually and knead to make a firm dough. Adjust milk accordingly.
  4. Cling wrap the dough ball and refrigerate for 30 mins.
  5. Pre heat the oven at 180 degree C and meanwhile take out the dough from the fridge and place it on a dusted counter.
  6. Roll out the dough ball into a rough shape with a thickness approx 1 mm.
  7. Take a sharp knife and cut off the sides to shape the flat dough a rectangular.
  8. Again with the same knife cut the rectangular vertically that divides it into two half.
  9. Cut each half into equal sized rectangles and that should give you 20 biscuits that will make 10 sandwich biscuits later.
  10. Take a tooth pick and pierce at equal distance to give that original bourbon look, sprinkle some sugar granules and transfer them on a lined baking tray.
  11. Bake the biscuits for around 12-15 mins or till the edges start turning dark.
  12. Place the biscuits on a wire rack and allow them to cool.
  13. To make chocolate cream filling, combine icing sugar with cocoa and softened butter and whisk to make a smooth and thick filling.
  14. Once the biscuits are cool, take one slice and spread the filling on the bottom side of the biscuit with a butter knife.
  15. Place another biscuit, bottom side over the cream to make a sandwich biscuit.
  16. Following the same make more biscuits and store in an air tight box to avoid getting them soggy.
