Ingredients Serving: 7

  1. All purpose flour 1 cup
  2. Egg 1
  3. Butter (soft) 1/4 cup
  4. Sugar 3/4cup
  5. Paneer (homemade)100 grams
  6. Salt a pinch
  7. Baking powder 1/2 teaspoon
  8. Lemon juice 11/4 teaspoon


  1. Butter and paneer should be at room temperature. Paneer should be soft and crumbly
  2. Beat butter until it's soft and fluffy
  3. Sieve all dry ingredients
  4. Add sugar to butter and mix well. Add egg, paneer , lemon juice and blend it using blender
  5. Add the dry ingredients slowly and using cut and fold method mix them with a spatula or spoon. It will be a thick cake like batter
  6. Preheat the oven to 180, line the baking tray with parchment paper. With a rounded tablespoon or icecream scoop drop the batter on the tray
  7. Bake for 10- 15 mins until the edges are crisp. These are delicate cookies, allow it to cool for 5 mins on baking paper and then completely cool on wire rack
  8. Store in air tight container and keep butter paper between the cookies. This can be stored for 2days
