ABOUT Curd Rice RECIPE

Curd Rice with potato is made in heaven combination. South indians cannot live without eating curd rice. Curd rice prepared using given method is very tasty and i will share some nuisances with you for making perfect curd rice.

Ingredients Serving: 4

  1. Raw rice 1 cup
  2. Salt
  3. Butter optional
  4. Hing
  5. Raw Mango or Pomogranate
  6. For tadka sesame Oil
  7. Mustard
  8. Jeera
  9. Ajwain
  10. Ginger
  11. Green chillies
  12. Curry leaves
  13. Cashews

Instructions

  1. Directly boil 1 cup of rice with 6 cups of water. Or you can pressure cook rice for 4 whistles.
  2. Start mashing rice when it is cooked. This is an important process. Mash completely
  3. Add salt, hing and 1 tbsp butter. Adding butter gives additional taste to curd rice. Mix well. Curd rice is a coolant and WHILE ADDING CURD, RICE SHOULD NOT BE HOT.
  4. Rest the rice to cool for 15 mins.
  5. Add Tadka. Heat Oil. Add Mustard when it cracks, add Jeera, green chillies, cashews, curry leaves, Ajwain and finely chopped ginger.
  6. For normal temperature Add 1/4 parts of milk and 3/4 parts of curd. If the place is hot add 1/2 parts of milk and 1/2 parts of curd. When you are eating for lunch, it tastes good. Mix well. Season with pomogranate or chopped mango.
  7. Curd rice is ready to serve
