ABOUT TAIWAN PINEAPPLE AND ROSE FILLED CAKE RECIPE

pineapple cake is one of Taiwan’s top selling souvenirs. Tourists visiting from Japan, China, and Singapore are truly, madly, and deeply in love with these miniature pastries. These fresh sweet and tangy pastries are really really refreshing and delicious. However I tried to make my own desi creation also by adding rose petals mixture, and trust me it's equally tasty.

Ingredients Serving: 10

  1. Butter 1/2 Cup
  2. Powdered sugar 20 grams
  3. Condensed milk 30 grams
  4. All purpose Flour 250 grams
  5. Corn flour 50 grams
  6. Pinch of salt
  7. Baking powder 1/2 teaspoon
  8. Soda 1/4 teaspoon
  9. Egg yolks whisked 2
  10. FOR PINEAPPLE FILLING (get around 350 pineapple filling )
  11. Fresh pineapples 1
  12. Sugar 110 grams
  13. Pinch of salt
  14. Corn syrup 1 teaspoon
  15. FOR ROSE FILLING
  16. Rose petals 150 grams
  17. Sugar 300 grams
  18. Water 1/2 cup
  19. Rose water 1 tablespoon
  20. Butter 1 teaspoon

Instructions

  1. MAKING PINEAPPLE FILLING -:
  2. Firstly cut the crown and the stem off and then peel the skins and clean the small holes.
  3. Get the pure fruit out and finely minced pineapple
  4. Strain the mixture to remove the extra juice. This step will speed of the filling making process.
  5. Transfer the mixture to a pan; add sugar and heat over medium fire. Keep stirring in the process. After several minutes, there is lots of liquid in the pan. Continue frying in the pan until the liquid is almost evaporated.
  6. Mix the corn syrup in and reduce the fire to slowest fire. Keep heating until the pineapple cubes becomes transparent. (The whole process may need 30-40 minutes)
  7. Wait for several minutes and then divide them into 26 equal portions (each one around 15g). Place in refrigerator and then you can shape them into balls
  8. STEPS FOR MAKING CAKE
  9. In a stand mixer, add butter and sugar and cream the mixture until light and fluffy(around 6-8 minutes).
  10. And then add egg and condensed milk. Mix until all of the ingredients are well combined.
  11. Add salt and flour in. Combine to form dough and set in refrigerator for around 40 minutes.
  12. Then divide the dough into 26 equal pieces. Wrap the shell with pineapple or rose filling and then press into the mould. Bake for 25 minutes.
  13. METHOD FOR MAKING ROSE FILLING
  14. Add all the ingredients in a nonstick pan ,cook it on slow flame till petals become very soft and sticky.
  15. Add 1 teaspoon butter and continue to stir for another 5 minutes
  16. Cool it and make balls. Rest of the procedure is same.
