ABOUT Coconuty Rose Cake RECIPE

I used to have these rose cakes right from my childhood, my mother always makes this eggless version at home

Ingredients Serving: 10

  1. All purpose flour 2 cups
  2. Rice flour 3/4 cup
  3. Cardamom powder 1/2 tsp
  4. Sugar 5 tbs
  5. Milk 1/2 cup
  6. Coconut milk 3 1/2 cups
  7. Baking powder 1/2 tsp
  8. Oil for deep frying
  9. Rose cake mould

Instructions

  1. In a bowl take all the dry ingredients together
  2. Then add Salt to taste
  3. Slowly add milk and coconut milk to form a batter of pouring consistancy, a little thinner than Dosa batter.
  4. Heat oil in a pan , temperature should be medium and the mould should be sizzling hot.
  5. Dip the mould to 3/4th in batter than
  6. Deep fry in oil, after few minutes slightly shake the mould holding the hand firmly, if the Rose cake is not getting removed, use fork or knife to shake it out .
  7. The colour and texture of the Rose cake shall as shown in the picture below.
  8. Remove and drain excess oil, store in an airtight container.
  9. Please heat the mould every time before dipping in batter.
