Preheat the oven to 200°C.
Heat the oil in large pan. Add the onions, fry until tender. Then add garlic, cook for another couple minutes and then tip this into a bowl.
Add the beef/mutton and cook until browned. Add the wine, ketchup, tomatoes, oregano and a bay leaf. Simmer for 30 mins.
In a saucepan, add 3 tbsp of milk, bay leaf and the onion-garlic.Bring to the boil, then remove from heat and leave it for 15 mins.
Strain the onion and bay leaf. Mix the cornflour and whisk into the infused milk over a medium heat.
Add the Cheddar/ mozzarella and season well. Then add nutmeg and cook for 2 mins.
Spoon a thin layer of meat sauce into the dish, then a little cheese sauce. Put a layer of lasagne on top.
Now add more meat and cheese sauces, for another couple of layers. Finish with lasagne, then with cheese sauce.
Sprinkle with Parmesan. Bake for 45-60 min
