these are fusion cupcakes,specially for festivals,whether it be Rakhi or Diwali or Holi ,these cupcakes base is vanilla sponge infused with Rasmalai flavors and pieces of Rasmalai,topped with Rasmalai again,so friends enjoy these cupcakes

Ingredients Serving: 6

  1. 1cup powder sugar
  2. 1/2 tsp baking soda
  3. 1 tsp baking powder
  4. 1tsp vanilla essence
  5. 1&1/2 cup apf/maida
  6. 1/2 cup milk
  7. 1/2 cup curd
  8. 1/2 cup oil/butter
  9. For Rasmalai----
  10. cow milk 1litre
  11. 1tsp vinegar or lemon juice
  12. sugar 1 cup
  13. water 3 glass
  14. cardmom powder 1tsp
  15. saffron strands
  16. 1/2 litre milk for ras of Rasmalai
  17. whipping cream 200 gms
  18. color of your choice
  19. pipping bag

Instructions

  1. for cupcakes-
  2. in a bowl seive apf/maida
  3. add baking soda in seive
  4. add baking powder also
  5. seive them altogether
  6. seive sugar
  7. in another bowl add curd
  8. add milk
  9. add oil
  10. add vanilla essence and whisk them
  11. add this wet mixture to dry mixture
  12. chop some Rasmalai and add to batter
  13. just mix it with spatula
  14. fill this batter in cupcakes
  15. leave 1/4 part of mould empty as they rise
  16. bake in preheated oven for 20-25 minutes
  17. at 180 degrees
  18. check by inserting toothpick
  19. if it comes out clean cakes are baked
  20. if not bake for another 5 minutes
  21. cool them completely
  22. for Rasmalai-
  23. boil milk
  24. as it comes to boiling point add lemon juice
  25. or vinegar
  26. milk will curdle
  27. seive it
  28. discard whey
  29. we are going to use paneer
  30. mash with palms of your hands
  31. it will turn soft dough like
  32. make round balls and flatten them
  33. in other pan add sugar and water
  34. switch on flame
  35. as it starts boiling add balls
  36. keep flame high for 10 minutes
  37. then slow down for 5-7 minutes
  38. add cardmom powder
  39. add saffron
  40. cool down completely
  41. boil milk 1/2 litre
  42. add sugar and cardmom powder
  43. add some strands of saffron
  44. add Rasmalai and dry fruits
  45. for cream frosting-
  46. whisk cream till soft peaks are formed
  47. add nozzle to piping bag
  48. in piping bag color different shades
  49. add whisk cream
  50. now prick cupcakes with toothpick
  51. add Rasmalai syrup
  52. make roses on cupcakes
  53. squeeze Rasmalai and remove
  54. cut Rasmalai into half and place on cupcakes
