Southindian Vegetable Bajji

Ingredients to make Southindian Vegetable Bajji

  • 1 cup maida or pancake flour
  • 2 cups besan or chickpea flour
  • 3 cups oil
  • Green chutney to serve
  • Ketchup to serve
  • Pinch of baking soda
  • Red chutney to serve
  • 1 cup vegetables such as potatoes sliced thin, eggplant sliced thin, onions sliced thin, Paneer cubes
  • salt to taste
  • 2 cloves garlic
  • sprig of mint
  • 2 spoons red chilli powder
  • 1 cup water to mix
  • 1 bunch of coriander leaves

How to make Southindian Vegetable Bajji

  1. Take a pan and add the pancake flour or maida with the besan add the baking soda and mix well with water
  2. in a mixer add garlic cloves, mint and coriander and grind smoothly and add to the batter
  3. Add the salt and chilli powder
  4. Heat oil in a kadai , dip the vegetables in the batter and fry 3-4 at a time
  5. drain in a tissue paper and serve hot with ketchup, green and red chutneys

My Tip:

Adding a sprinkle of chat masala on top will make the bajjis divine
