Ingredients to make Chana studded kachori with sweet sour tomato chutney

  • For kachauri
  • 2 cup maida or ( atta and maida in ratio of 1:1)
  • 2 tbsp ghee
  • 1 onion finely chopped
  • 1 tbsp cumin whole
  • 1 tsp green .chilli choppes (optional)
  • salt to taste
  • water as required
  • oil for frying
  • for tomato chutney
  • 3 red tomato finely chopped
  • 1 tsp paanch phoran
  • 1 tbsp.oil
  • 2 tbsp grated gur
  • 1 tbsp vinegar
  • salt to taste
  • 1 tsp red chilli flakes

How to make Chana studded kachori with sweet sour tomato chutney

  1. Mix all the ingredients of dough
  2. Knead a tight dough by adding water
  3. Rest for 30 mins.
  4. Then roll out in small circles
  5. Heat oil in a katahi .
  6. Fry rolled kachauri on low flame till it is crisp and light brown.
  7. For tomato chutney
  8. Chop tomatoes
  9. Heat a pan . To this add oil. Let it heat
  10. Then add paach phoran to this. Let it crackle
  11. Add chopped tomato to this. Let it cook for few mins
  12. Add salt, chilli flakes and cook till tomato is completely cooked
  13. Add grated gur and finish it by adding vinegar.

My Tip:

While rolling kachauri make sure chana also flattens .This gives kachauri altogether a new texture.
