Ingredients Serving: 4

  1. FOR PIZZA DOUGH
  2. 31/2 to 4 cups of all purpose flour
  3. 1 teaspoon sugar
  4. 1 envelope instant dry yeast
  5. 2 teaspoon salt
  6. 11/2 cups of hot water
  7. 2 tablespoon of extravirgin olive oil
  8. for toppings
  9. 3 tablespoons of extra virgin olive oil
  10. 2 to 3 cloves of garlic grated
  11. 1 bunch of Spinach
  12. Salt and ground black pepper As per taste
  13. Nutmeg to taste(optional)
  14. 1 cup feta cheese crumble
  15. 11/2 cup mozzarella cheese
  16. 5 to 6 olives halved
  17. 1 sprig oregano finely chopped

Instructions

  1. For dough
  2. Combine all purpose flour, sugar,yeast and salt in a bowl. While mixing add hot water gradually and a tablespoon of olive oil. If the dough is sticky add flour.
  3. Until the dough comes together in a solid ball.
  4. If the dough is too dry add 1 tablespoon of water,1 at a time
  5. Gently knead the flour on a lightly floured surface to form firm , smooth ball
  6. Grease a bowl with olive oil,add dough, cover the bowl with plastic wrap or a wet cloth. Keep it aside to double for about an hour
  7. After an hour take the dough out on a lightly floured surface and divide it into two equal halves
  8. Cover each half with plastic wrap and wet cloth. For 10 minutes
  9. Roll the dough.
  10. Pre - heat the oven at 180°C for 10 minutes.
  11. Put the base in the oven for 10 minutes.
  12. Take it out for putting the toppings.
  13. For topping
  14. In a pan add oil and grated garlic before the oil starts smoking and then spinach leaves till the spinach leaves just start leaving water. Add nutmeg powder.
  15. On the base put spinach mix , crumbled feta cheese, mozrella cheese, put halved olives spread olive oil on the above , some salt and ground pepper. Add finely chopped oregano.
  16. Put it in the oven for 10 minutes at 180 °C till the cheese melts .
