ABOUT Munagakku porutu(drumstick leaves fry) RECIPE

Drumstick leaves are a boon to diabetics, these leaves are rich in iron, calcium and fibre. This particular dish is a rustic way of inculcating greens and health into receipes which the "pattus" did. Pattus are natives of chittor district in Andhraprades.

Ingredients Serving: 4

  1. Drumstick leaves(cleaned and deveined) - 2 cups
  2. Ground nuts -1/4cup(dry roasted, peeled and coarsely ground)
  3. Garlic 1/2 pod - crushed coarsely
  4. Chanadal - 1/4tsp
  5. Mustard seeds - 1/4tsp
  6. Oil - 2tsp
  7. Turmeric powder - 1/4tsp
  8. Salt as per taste
  9. Onion - 1 - small - finely chopped

Instructions

  1. Boil the leaves in turmeric and salt water for 15mins and strain it.
  2. In a kadhai add oil and when its heated add mustard seeds, let it splutter then add chanadal and roast it.
  3. Now add the chopped onion and then fry till translucent, then add the crushed garlic and saute for a minute,
  4. Now add the cooked leaves and fry for a minute till all the water evaporates,
  5. Now add the coarsely crushed groundnuts and fry for a minute.
  6. Serve with hot rice and ghee, can be had as side dish, can be had with roti or stuffed in parantha, add this fry to egg and make a healthy omlet. Mix it with dosa batter and make thick fluffy yummy dosas.
