Minty Potato Chunks

Ingredients to make Minty Potato Chunks

  • potatoes 4 to 5 medium size
  • Washed mint leaves 2 cups
  • ginger grated 2 teaspoon
  • green chilly 2
  • Black salt / kala namak to taste
  • jeera 1 teaspoon
  • oil 1 to 2 tablespoon
  • lemon juice 2 teaspoon

How to make Minty Potato Chunks

  1. Wash and peel off Potatoes
  2. Chop in big chunks and par boil in microwave or in boiling water for 5 minutes
  3. Remove excess water and pat dry
  4. Heat sufficient oil in a pan and add potato chunks and saute till crisp and golden in colour
  5. In a blender take chopped green chilly, jeera, ginger and chopped mint leaves and prepare a smooth paste
  6. Add this green paste to already cooking potato chunks and adjust salt by adding black salt
  7. Cook uncovered till excess juices evaporates
  8. Keep turning and checking in between
  9. Minty Potatoes are ready to serve
  10. Lastly add lemon juice, Serve hot or cold - tastes equally good

My Tip:

Black pepper powder can also be used to increase spicyness
