Ingredients Serving: 3

  1. 3 Eggs
  2. 2 Potatoes cubed
  3. Besan 1 tablespoon
  4. 2-3 Green chilies chopped
  5. 3 Onions finely chopped
  6. 2 small Tomatoes chopped
  7. Ginger- Garlic paste 2 tsp
  8. Turmeric powder 1 tsp
  9. Sugar 2 tsp
  10. Coriander powder 2 tsp
  11. cumin powder 2 tsp
  12. red chili powder 1 tsp
  13. salt to taste

Instructions

  1. In a bowl, add eggs , Besan, salt, green chilies and 1/4th of the chopped onion and whisk everything well.
  2. Make 3-4 omlettes and fold each omlette into triangle.
  3. Heat oil in a kadai , splutter cumin seeds.
  4. Add ginger garlic paste and chopped onions. Cook until onions turn translucent.
  5. Now add cubed potatoes and fry till it turns golden brown.
  6. Add the tomatoes and saute till it turns mushy. Add spice powders and salt. Mix well
  7. Now add water for gravy. As the water starts boiling , add the cooked omlettes to the gravy. Cook till the gravy thickens. Adjust seasoning. Serve hot
