Ingredients Serving: 2

  1. Groundnut 3 tbsp
  2. Mustard seeds-1/4 teaspoon
  3. Curry leaves 6-7
  4. Poha-1.5 cups
  5. Spinach -1/2 cup
  6. Par boiled Cauliflower 1/4 cup
  7. Boiled potatoes- 2
  8. Onion -1 thinly sliced
  9. Coriander leaves 2 tbsp
  10. Green chili-3-4
  11. Grated mozzarella cheese 1/4 cup
  12. Lemon juice 1 tsp
  13. Salt to taste
  14. Garam masala-1/4 teaspoon
  15. Coriander powder- 1/4 teaspoon
  16. Red chili powder-1/4 teaspoon
  17. Water as required
  18. Oil-1 teaspoon
  19. Tomato ketchup 1 tbsp

Instructions

  1. Wash poha in water and keep aside.
  2. Heat oil in pan and roast groundnuts for 2 mins
  3. Splutter mustard seeds and add curry leaves. Saute for few seconds
  4. Add onions and saute until translucent. Add veggies and mix well
  5. Add salt ,Garam masala,coriander powder ,red chili powder . Mix well. Cook until veggies are tender
  6. Add poha with tomato ketchup and mix well. Cook until poha is done
  7. Sprinkle lemon juice and toss well. Garnish with coriander leaves and cheese and serve
