Do you have an Avocado, a few herbs and a packs of Bagels lying around in your house? Let me share with you a breakfast recipe, that will put the best Cafe in your neighborhood to shame, both in taste as well as appearance!

Ingredients Serving: 2

  1. 1 large Avocado, fleshed out
  2. 1/4 cup fresh Coriander/Parsley leaves, finely chopped
  3. 1/5 cup Spring-onion Greens/leaves, washed and finely chopped
  4. 3 tbsp Lemon juice
  5. Salt and pepper to taste
  6. 2 Breakfast Bagels
  7. 1 large tomato, cut into round slices
  8. 1/2 cup grated Cheese
  9. 1 tsp Dried Mixed Italian herbs (optional)
  10. 2 tbsp extra-virgin Olive Oil
  11. 1/4 cup butter at room temperature
  12. 2 Eggs

Instructions

  1. Preheat the oven to 190 degrees C.
  2. Slice both bagels from the middle and apply butter on the lighter sides. Bake for 7-8 minutes, until golden-brown and crisp
  3. In a separate tray, line tomato slices and drizzle olive oil, dried mixed herbs, salt and pepper. Place tray in oven at the same time as bagels. Bake till tomatoes are cooked.
  4. In a bowl, add the avocado flesh and mash well with a fork. Add the Coriander, Spring-onion greens, salt, pepper and lime juice and mix well to combine. Set aside. Guacamole topping is ready
  5. In a pan, fry both eggs, sunny side up.
  6. Place the bagels on work-top, buttered sides up. Top the two bottom pieces with a generous sprinkle of grated cheese. Place baked tomatoes on top of the cheese. Scoop large quantities of the Guacamole and spread on top of the tomato layer on both the bagels. Finish by sprinkling some more grated cheese. Replace the top halves of both the bagels over their bottom halves.
  7. Heat some butter in the frying-pan or a grill pan. Heat loaded bagels till cheese melts and bagels are hot.
  8. Serve the Guacamole topped Bagels hot with a fried egg. Enjoy!
