ABOUT Methi Namkeen RECIPE

Methi atta namkeen is an Indian flaky biscuit snack with mild to spicy taste. It is generally made using all purpose flour, water and spice. But I used wheat flour place on all purpose flour. Here I slow you how to make it with fresh fenugreek leaves, wheat flour and semolina.

Ingredients Serving: 8

  1. 1 cup wheat flour
  2. 1/2 cup semolina
  3. 1.5 cups fenugreek leaves
  4. 1/2 tsp salt
  5. 1/2 tsp red chili powder
  6. 1 tsp ajwain
  7. 1/2 tsp black pepper
  8. 3 tbsp oil
  9. 1.5 cups water
  10. Oil for deep frying

Instructions

  1. Chop fenugreek leaves finely
  2. In a bowl, add wheat flour, salt, red chili powder, black pepper, ajwain, oil and mix well.
  3. Knead stiff dough and keep it aside for 15 minutes.
  4. Roll the dough into big roti
  5. Cut roti into small discs
  6. Prick the roundels with fork all over
  7. Deep fry the discs over medium heat until golden brown and crisp
  8. Drain excess oil on an absorbent paper.
  9. Allow them to cool and store in an airtight container.
  10. Enjoy them with your tea or coffee.
