ABOUT Pudina Pulao or Mint Rice RECIPE

Pudina Pulao or Mint Rice recipe is quick and easy to make with mint flavour which is refreshing. It can be served with the raitha of your choice.

Ingredients Serving: 4

  1. Cooked Rice - 4 cups
  2. Cooking Oil - 1 tbsp
  3. Ghee - 1/2 tbsp
  4. Ginger/Garlic paste - 2 tsp
  5. Onion - 1 big (chopped finely)
  6. Green Chillies - 2/3 slit
  7. Cardamom - 3/4 nos.
  8. Cloves - 4/5 nos.
  9. Cinnamon stick - 2
  10. Bay leaves - 2 small
  11. Chilli powder - 1 tsp
  12. Coriander seeds - 2 tbsp (roasted and powdered)
  13. Turmeric Powder - 1/4 Tsp
  14. Boiled fresh/frozen peas - 1/2 cup
  15. Fried Cashew nuts - 1/2 tbsp
  16. Salt to taste
  17. To Grind: Mint leaves/fresh pudina (2 cups) and Fresh Coconut gratings (1/4 cup) - grind to a paste using little water

Instructions

  1. In a thick bottomed pan, heat the oil/ghee and add the Cardamom, cloves, cinnamon and bay leaves and let it splutter
  2. Then add the onion and green chillies - fry until brown
  3. Now add the ginger garlic paste and fry until the raw smell leaves
  4. Then add the spice powders (chilli, coriander and turmeric), salt and fry well.
  5. Add the mint/coconut paste and fry nicely until the raw smell disappears.
  6. Finally, add the boiled peas, fried cashews and the cooked rice. Fry well on the high flame until rice mixes well with the paste.
  7. Mint Pulao or Pudina rice, is ready to serve with the raitha and chutney of your choice.
