ABOUT Prawns Ghee Roast RECIPE

Ghee roast is a famous mangalorean dish. This spicy prawn ghee roast goes so well as a side dish for lunch with rice and curry. Prawns are coated and roasted in a spicy masala and flavored with ghee.

Ingredients Serving: 4

  1. Prawns - 1 Kg cleaned
  2. oil - 30 ml
  3. Ghee - 30 ml
  4. To Marinate:
  5. Lemon - 1
  6. Curds - ½ Cup
  7. Pepper powder - 1 Tbsp
  8. Turmeric powder - 1 Tsp
  9. Salt - To taste
  10. To Grind:
  11. Red long chillies - 30 roasted
  12. Coriander Seeds - 1 Tsp roasted
  13. Cumin Seeds - ½ Tsp roasted
  14. Fenugreek Seeds - ½ Tsp roasted
  15. Garlic flakes - 12-16
  16. Tamarind - Cherry size ball soaked in 2 tbsp water

Instructions

  1. Marinate prawns and Keep it marinated for 8-24 hrs in the refrigerator.
  2. Grind Red chilies, coriander seeds, cumin, fenugreek, garlic and tamarind to a thick paste.
  3. Heat oil in a shallow pan. Roast the marinated prawns till they cook. Drain and keep aside.
  4. In the same oil, roast the ground masala till oil leaves the sides and raw smell disappears. Add salt to taste, the marinade and the cooked prawns. Mix well and keep for 2-3 mins on slow fire.
  5. Add ghee, mix and cover. When the masala gets thick, transfer to serving dish, garnish with chopped coriander or curry leaves and serve hot with lemon wedges.
