ABOUT Coconut Date Balls ( For Pregnant women) RECIPE

Rich in fibre and low in sucrose, dates relieve constipation and reduce gestational diabetes risk and help during labor. Coconut is high in potassium, magnesium and protein and is a good source of dietary fiber, calcium and Vitamin C. Its rich and yummy in taste. These balls can be consumed for health conscious folks too

Ingredients Serving: 2

  1. 14-16 dates
  2. 1 cup unsweetened desiccated coconut
  3. 1/4 tsp cinnamon (optional)
  4. 1 tsp finely chopped nuts (almonds/walnuts) (optional)
  5. 1/4 cup or more desiccated coconut for rolling

Instructions

  1. In case of semi-dry or dried dates, soak it in water for 1-2 hours. Seedless dates are best. Remove the seeds before grinding if using seeded dates
  2. Grind coconut and dates with nuts and cinnamon well. Take it in a bowl, shape it like balls. Roll it over desiccated coconut and store in air tight container
