ABOUT Sweet potato and lentil soup RECIPE

This is a healthy soup which consists of sweet potato and lentils. And it is thickened using oats instead of corn flour. Sweet potatoes are rich in vitamin A which is important for the growth of cells in foetus. It also helps to provode a feeling of fullness, it reduces blood sugar increase and also helps in digestion. Lentils are rich in protein, iron, folate (B9) and calcium, all of which the body needs more of during pregnancy and which are very important for the health of mother and baby. Oats is rich in proteins, fiber, vitamins and magnesium all which are required during pregnancy. This soup can also be given to babies by reducing the spices and pureeing it. Thus this is a soup for babies, pregnant women and elderly.

Ingredients Serving: 2

  1. Sweet potato - 1 cup chopped
  2. oil - 1 tablespoon
  3. onion - 3 tablespoon chopped
  4. garlic - 2 cloves minced
  5. ginger - 1 teaspoon minced
  6. cumin powder - 1/4 teaspoon
  7. turmeric powder - 1/4 teaspoon
  8. chilly powder - 1/2 teaspoon
  9. red lentils - 1/4 cup
  10. water - 1 1/2 cup
  11. Oats - 2 tablespoon
  12. salt - to taste
  13. tomato - to garnish ( optional)
  14. Corinader - to garnish
  15. pepper - to taste
  16. lime - to taste ( optional)

Instructions

  1. Pour some coconut oil in a pan.
  2. Add onions to it.
  3. Add salt, chilly powder, cumin powder and turmeric powder to it.
  4. Add minced garlic and ginger.
  5. Stir it.
  6. Add sweet potato.
  7. Add lentils.
  8. Stir.
  9. Pour 1 1/2 cup of water.
  10. Add two tablespoon of oats.
  11. Bring it to boil.
  12. Reduce flame and simmer for 10min or till lentil softens
  13. Season it with salt and pepper.
  14. Add squeeze of lime(optional)
  15. Garnish with chopped tomato and coriander.
