Its a bengali recipe. Here roasted moong dal is cooked with Hilsa fish head. It can be a best paired with steamed rice. It contains full of protein. Hilsa fish give it a yummy favour.

Ingredients Serving: 8

  1. Moong dal(Washed and dried)- 500 gram
  2. Hilsa fish head- 1 full head of a large hilsa fish cut into 4 pieces
  3. Ginger paste-2 tablespoon
  4. Onion(finely chopped)- 1 small
  5. Tomato(finely chopped)- 1 large
  6. Green chilli(slit)- 3-4 pieces
  7. Cumin powder- 1 tablespoon
  8. Coriander powder- 3/4 tablespoon
  9. Turmeric powder- 1 teaspoon + extra for marinating the fish head
  10. Red chilli powder- 1 teaspoon
  11. Garam masala powder- 1 teaspoon
  12. Roasted Cumin powder- 1 teaspoon
  13. Salt to taste
  14. Sugar- 2 teaspoon
  15. Mustard oil- 4 tablespoon
  16. Ghee-1 tablespoon
  17. Whole masala for tempering,
  18. Cumin seeds- 1 teaspoon
  19. Bay leaves- 1-2 pieces
  20. Dry red chilli- 1 piece
  21. Green cardamom- 4-5 pods
  22. Cinnamon stick- 1-2 pieces
  23. Clove-2-3 pieces
  24. For garnishing,
  25. 1 red chilli(fresh)
  26. 1 green chilli(fresh)

Instructions

  1. First dry roast the moong dal until it become light brown.
  2. Then boil it 70% with water. Season with salt. Keep it aside.
  3. Take oil in a deep pan.Let it heat properly.
  4. Marinate the fish head with salt and pinch of turmeric powder.
  5. Fry the hilsa fish head until it change the colour. Keep it aside.
  6. Now add all whole masala in left over oil. Let it crackle.
  7. Add chopped onion. Add salt to taste. Saute it until it becomes golden brown.
  8. Add tomato, green chilli and ginger paste. Saute everything well.
  9. Add all dry masala powder except garam masala and roasted cumin powder.
  10. Add little hot water and cook the masala until oil is separated from it.
  11. Now add cooked dal.
  12. Add fish head.
  13. Adjust the salt. Cover with lead. Let it cook for 10-15 minutes in medium heat.
  14. If you need you can add hot water at this point. But this will be a thick dal.
  15. Finally add sugar, garam masala, roasted cumin powder and ghee as well.
  16. Give it a good stir. Garnish it with chillis. Serve it in a serving dish and enjoy it with hot steamed rice.
