ABOUT IDLI SAMBHAR RECIPE

Idli sambhar, southern delicacy served as finger food, appetizer. I gave a health dose to my Idlis by adding my secret ingredient powdered oats.

Ingredients Serving: 10

  1. For Idlis
  2. Rawa 1+1/2 cup
  3. Powdered oats 1/2 cup
  4. Buttermilk 2+1/2 cup
  5. Salt 1 tesp
  6. Eno salt 1+1/2 tesp
  7. For sambhar
  8. Chopped mixed vegetables 2 cup
  9. Pigeon pea 1/2 cup
  10. Tamarind pulp 2 tbsp
  11. Coriander powder 1 tesp
  12. Turmeric powder 1/2+1/4 tesp
  13. Garam masala 1/2 tesp
  14. Red chilli powder 1/2 tesp
  15. Asafoetida 1/4 tesp
  16. Ginger paste 1 tesp
  17. Tomatoes 2 big
  18. Oil 2 tbsp
  19. Cumin seeds 1/2 tesp
  20. Mustard seeds 1/2 tesp
  21. Curry leaves 1 sprig

Instructions

  1. Mix together rawa, powdered oats and buttermilk. Rest it for 15 minutes.
  2. Add salt and Eno salt and 2 tbsp water. Mix.
  3. Fill the batter in greased microwave able mini idlis mould.
  4. Micro on high for 3 minutes.
  5. Cook whole batter.
  6. Finely chop mix vegetables and wash pigeon pea.
  7. Pressure cook chopped vegetables and dal with 2 glass water, 1 tesp salt and 1/2 tesp turmeric powder for 1 whistle and then simmer for about 15 minutes.
  8. Dissolve tamarind pulp, coriander powder, turmeric powder, garam masala, red chilli powder, Asafoetida and ginger paste in 2 tbsp of water.
  9. Grind tomatoes to fine puree.
  10. Splutter cumin seeds and mustard seed in oil.
  11. Add curry leaves.
  12. Add pureed tomato. Cook until oil oozes out.
  13. Add tamarind mixture and cook until oil oozes out.
  14. Add this tadka to boiled vegetables and dal.
  15. Add 2 more glass of water and give a boil.
  16. Simmer for 15 more minutes.
  17. Prick Idlis in toothpick and serve with sambhar filled in glasses halfway.
