A simple Middle Eastern breakfast or a brunch idea. Khubz refers to the pita bread and jibna is nothing but cheese in Arabic. Any type of cheese spread can be used in this. Mix of different cheese can also be used. It tastes so very heavenly even with just the plain cheese. Nothing else needed for this fabulous looking yummy pitas.

To the warm water, add yeast and sugar.
Stir it lightly and allow it to prove for about 5 minutes.
In a mixing bowl, mix salt and the all purpose flour.
Knead a smooth dough using some butter.
Cover and let it double in size for an hour.
Bring the flour on a dusted surface and knock it back to remove the excess air.
Divide into 6 parts.
Roll each into a round shape flat bread called pita.
Spread a generous layer of cheese on each.
Preheat the oven on 200°.
Let the pitas be covered until 10 minutes.
After 10 minutes, bake them for 10 to 12 minutes.
The cheesy pita breads are ready.
Serve them warm with a cup of coffee.
