ABOUT Apricot Curry Leaf Rice With Almonds RECIPE

It is a stock based rice with dumping of curry leaf and almonds.

Ingredients Serving: 4

  1. Chicken stock 1 liter
  2. Date syrup 75 ml
  3. Rose water 1 tbsp
  4. Ground cardamon 1 tbsp
  5. Long grain white rice 400 gms
  6. Butter 1 tbsp
  7. Dried apricot 100 gms
  8. Curry leaf 20 - 25
  9. Almond 80 gms
  10. Onion 1/2 cup (optional)

Instructions

  1. Wash the rice and leave it to soak for 30 minutes. Rinse till the water runs clear, then drain and keep aside.
  2. In the chicken stock add date syrup, rose water, cardamon and stir until well mixed.
  3. Melt butter in the rice pot, add curry leaf, rice, almond and onion (optional), gently stir for 2-3 minutes.
  4. Add in the sweetened chicken stock and bring to bring to a boil. Add apricot pieces, cover tigthly and simmer on low heat until rice is well cooked. Serve hot.
