Ingredients Serving: 6

  1. 1 cup Sooji( semolina
  2. 1/2 cup coarse gram Flour ( ladu besan)
  3. 1 tbs chopped ginger
  4. 2 tbs chopped green garlic
  5. 1 cup chopped cabbage
  6. 1 tbs chopped coriander leaves
  7. 5 green chillies chopped
  8. 1 tsp turmeric powder
  9. 2 tsp red chilli powder
  10. 1 tbs lemon juice
  11. 1/2 cup yogurt
  12. 1 tsp Baking powder
  13. 1/2 baking soda
  14. 1 tbs sugar
  15. 1 tbs pickel Masala ( methiya)
  16. Salt to taste
  17. Water for needed
  18. For tadka-
  19. 2 tsp Mustard seeds
  20. 1 tbs seasum seeds
  21. Some curry leaves
  22. 2 tbs oil
  23. 1/2 tsp asafoetida


  1. In a bowl add Sooji, flour and yoghurt,ginger, green chillies,all spices and powders, mix well.Add little water and make a thik better.
  2. Keep aside for 5 minutes. Add veggies and mix well add little water. Check the consistency. Required more, than add little water and adjust the consistency.
  3. Better not too thick or not too watery. Heat deep pan and add oil. Add mustard seeds ,curry leaves , when mustard seeds crackle then add asafoetida and sesame seeds.
  4. Keep separate one tbs tadka oil with mustard seeds,and sesame seeds for Spread on top.
  5. After pour all handvo batter ,now pour 1 tbs tadka oil on top . cover and cook on medium heat for 15 minutes or bottom is crispy and golden.
  6. After carefully flip over and cook until the other side is golden. Serve with tea, chatni.
  7. In Oven- Pour the better into a greased deep baking tray ,sprinkle tadka on top. Bake in a pre-heated oven at 200c ( 400f) for 30 minutes or until golden brown in colour.
