ABOUT Colors of life RECIPE

It is a combination of many colors and flavor profiles on one plate, potatoes, broccoli, dehydrated carrot scraps, fresh turmeric, pickled ginger julienne, fresh rose paste and petals and pink peppercorns

Ingredients Serving: 4

  1. 250 gms new potatoes
  2. 100 gms broccoli
  3. 100 gms carrot
  4. 2 inch fresh turmeric
  5. 3 inch ginger
  6. 50 ml Hudson canola oil
  7. 50 gms amul butter
  8. 5-6 pink peppercorns powdered
  9. Salt
  10. 50 gms fresh pink rose paste
  11. Few pink rose petals
  12. 200 ml Amul fresh cream

Instructions

  1. Heat the canola oil and butter in a heavy bottom fry pan and bring the temperature to 60 degrees and maintain
  2. Wash the potatoes and cut into 1 inch cylinder and then take a apple corer and take out small cylinders
  3. Cut the broccoli into small pieces, wash and set aside
  4. Take a peeler and peel the carrots into strips and then put them in an air fryer for 50 mins at 60 degrees
  5. Now take the potato cylinders and drop in the pan of oil and butter mix and braise them for 40 mins on the same temperature occasionally stiring them , after cooking them for 20 minutes midway add 2 pinch of salt to get extra crispiness.
  6. Wash and remove the peel of ginger and slice them and then julienne them. Squeeze juice of 2 lemon in a bowl, add salt and ginger mix and set aside.
  7. Fine grate the turmeric and in a pan add 1 tsp of Hudson canola oil , now add the grated turmeric and fry for a minute till it releases it's flavours in the oil, now add the fresh pink rose paste and cook for a minute more. Add the pink peppercorns powdered and then some salt, now add the cream and stir, bring to boil and shut down the gas.
  8. After 35 mins of braising the potatoes add the broccoli and cook together for the last five minutes
  9. After 50 minutes of carrot been in the air fryer, they would have turned into crispy threads
  10. Assemble four plates and arrange to your choice, I prefer to have a piece each of the ingredient in one bite.
  11. Important tip is that crush the pink peppercorns till powdered as the more it is crushed it will release it's sweet flavor.
