ABOUT Maple Pecan Carrot Bundt cake RECIPE

Carrot bundt cake with cream cheese center and frosting is a must try dessert as it is the best dessert ever. It is a combination of flavors and textures which include maple syrup, Cinnamon, cream cheese , carrots and chopped pecans.

Ingredients Serving: 10

  1. 2 cup : All purpose flour
  2. 4 no : Large eggs
  3. 1 cup : Canola oil
  4. 2 cup : Granulated sugar
  5. 1 tsp : Baking Soda
  6. 1 tsp : Baking powder
  7. 2 tsp : Cinnamon
  8. 2 cup : Shredded carrots
  9. 1 cup : Chopped Pecans
  10. For the filling : 1 cup : Softened cream cheese
  11. 1/3 cup : Maple syrup
  12. For the frosting : 1/2 cup : Cream cheese
  13. 3 tbsp : Milk
  14. 1/2 to 1 cup : powdered sugar
  15. 3 tbsp : Chopped pecans

Instructions

  1. Preheat oven to 350 degree F. Spray a 12 cup bundt pan generously with baking spray. Set aside.
  2. In a large bowl, combine all the ingredients listed under the cake. Mix until well combined and Set aside.
  3. For the filling, beat cream cheese , maple syrup until smooth and Set aside.
  4. To assemble, fill bottom of sprayed bundt pan with about 1/2 of the cake batter. Spoon the cream cheese filling and top it with the remaining other half of the cake batter.
  5. Bake cake in a preheated oven for 60-65 minutes. Cake will be browned and will pull away from the sides of the pan when done.
  6. It is always better to insert a skewer and check for doneness.
  7. Once baked remove from the oven and cool for 5-10 minutes before inverting onto a wire rack. Cool completely before frosting.
  8. For the frosting, beat cream cheese, milk and powdered sugar together until smooth and creamy.
  9. Pour frosting into a large ziploc bag and snip off the corner. Pipe onto cake, generously. Sprinkle with chopped pecans.
  10. Slice, Serve and ENJOY!
