Surti locho

Ingredients to make Surti locho

  • chana daal-1 cup
  • Urad daal-1/3 cup
  • Beaten rice or poha-1/3 cup
  • ginger chilli paste-1 tbsp
  • turmeric-1/2 tsp
  • red chilli powder-1 tsp
  • Asafetida-1/4 tsp
  • oil-1 tbsp
  • Eno fruit salt-1/2 tsp
  • salt
  • For locho masala;:
  • Roasted cumin powder-1/4 tsp
  • red chilli powder-1/4 tsp
  • Black salt-1/4 tsp
  • Chaat masala-1/4 tsp
  • Black pepper powder-1/4 tsp
  • salt-1/4 tsp
  • For serving:
  • oil
  • butter
  • Sev
  • Green coriander
  • Green chutney

How to make Surti locho

  1. Wash and soak both the daals for 4 hours.
  2. Now drain water from daal and grind chana daal first.
  3. Wash and rinse beaten rice.
  4. Gring urad daal and poha together.
  5. Mix both the pastes and mix .
  6. Keep to ferment for 8 hours.
  7. After fermentation batter doubles up.
  8. Now add ginger chilli paste,turmeric,chilli powder, asafetida,salt in the batter.
  9. Mix well.Keep a steamer with water to heat.
  10. Grease a thali with oil.
  11. Now add oil and eno to batter and mix lightly.Sprinkle some red pepper powder.Pour in greased plate and keep to steam.No need to level it.
  12. It takes about 10 minutes to cook.
  13. To prepare locho masala take all ingredients listed and mix everything.
  14. Check whether locho is cooked with a knife or tooth pick.
  15. Remove from steamer and serve hot with a spoon.No need to cut into any shape.Just scoop out with spoon and serve hot.
  16. Now lets garnish with following ingredients.
  17. Pour a spoon of oil on hot locho.Then put butter.
  18. Sprinkle locho masala generously.
  19. Sprinkle sev,green coriander leaves and serve with green chutney.
  20. You can serve some chopped onions also if you like.

My Tip:

This is sev butter locho.You can add cheese for variation or even schezwan chutney to give it chinese twist.
