Lovebird cookies

Ingredients to make Lovebird cookies

  • 2 cups all purpose flour
  • 1/2 cup Unsalted butter, at room temperature
  • 5 tbsp Vegetable oil
  • 1/2 cup Powdered sugar
  • 1/2 tsp Flavouring essence of your choice ( vanilla,strawberry,almond,butterscotch)

How to make Lovebird cookies

  1. Cream the butter and sugar together, do not overmix or your cookies will spread. on the contrary if you want fluffy cookies cream it well.
  2. Add oil and the flavouring. Next mix the flour and make a soft dough.
  3. Spread the dough in the form of a disc and cover with plastic wrap and refrigerate for at least an hour.
  4. Remove the dough,let is stay for 5 -10 mins. On a floured surface roll the dough with some extra flour to a thickness of 1/4 inch. Refrigerate again for 15 mins.
  5. Remove the rolled dough, cut your favorite cookie shapes using cookie cutter dipped in flour. Place your cut cookies on cookie sheet and refrigerate for about 15 minutes to overnight.
  6. Alternatively if you do not want to make shaped cookies, skip all the steps from 3 to 5. Use a spoon to spoon out the cookie dough on a cookie sheet.
  7. Preheat the oven to 375 F and bake the cookies untill the edges are slightly golden - the more you bake them,the more crispy they become. In my oven, I bake them for about 10 -12 min. The time also varies based on the size and thickness of

My Tip:

Variations: 1. You can add like 1/2 cup of chocolate chips to the dough. 2. You can add 1/2 cup of chopped nuts of your choice 3. Replace 1/3 cup of flour with cocoa powder or almond flour to make chocolate or almond shortbread cookies respectively. 4. Melt semisweet chocolate, and partially dip the basic shortbread cookie in the chocolate and let is set. 5.Decorate the shaped cookies with tinted fondant or modelling chocolate 6. Christmas special variation : Add 1 cup of chopped unsalted pistachios and 1 cup of chopped cranberries or cherries. You will have wonderful cookies with red and green bits!
