Ingredients Serving: 2

  1. 3 eggs
  2. 1 tablespoon ginger garlic paste
  3. 1/2 cup onions ( chopped)
  4. 1/2 cup tomatoes (chopped)
  5. 1 tablespoon green chilli (chopped)
  6. 7-8 cashewnuts
  7. 1.5 tablespoon cream
  8. salt (to taste)
  9. 1/2 teaspoon red chilli powder
  10. 1 teaspoon coriander powder
  11. 1 teaspoon garam masala
  12. 1 tablespoon ghee


  1. Heat ghee in a pan.
  2. Fry cashewnuts in ghee and take them out.
  3. In the same ghee, add ginger garlic paste. Saute.
  4. Add chopped onions and saute till they turn translucent.
  5. Add chopped tomatoes and green chilli and mix well.
  6. Add salt, coriander powder, red chilli powder and garam masala. Mix well.
  7. Break the eggs and beat them. Add them to the pan. Mix well.
  8. Add cream and mix well. Gently scrape and scramble the eggs till they are cooked, but not overcooked. They should be soft, creamy and not shredded into bits.
  9. Add fried cashews and serve with warm toast.
