Ingredients Serving: 3

  1. I. Cous cous base
  2. 1 cup Cous Cous
  3. 1 lemon: juice
  4. 1.5 tsp olive oil
  5. salt, pepper to taste
  6. Handful basil leaves
  7. 4-5 cherry tomatoes
  8. 1.5 cup chicken broth/stock/or cubes
  9. 1/4 cup Peas, carrots
  10. Curry leaves: 5-6
  11. II. Chicken toppings
  12. Ready to use Herb Chicken breast: 1-2
  13. Barbeque sauce
  14. Chives
  15. Sweet chilli sauce
  16. Chicken broth: 1/2 cup
  17. Handful Bean sprouts


  1. In a bowl, add Cous Cous and squeze lemon juice, add olive oil in it.
  2. Add salt, pepper, basil leaves and cherry tomatoes and give a shake.
  3. Meanwhile, take chicken broth/stock/ or use stock cubes/ or plain water and bring it to boil.
  4. Add peas, carrots, curry leaves, bit of salt.
  5. Add thus broth to the dry Cous Cous mix.
  6. Carefully give it stir with back of spoon.
  7. Cover the cous cous with cling foil and let it stay there for 5-10 min
  8. After soaking in chicken broth Cous Cous has puffed up perfectly.
  9. Carefully fluff it with fork, so that they segregate and become fluffy
  10. Keep it aside and now prepare your chicken toppings
  11. I am using frozen smoked chicken breast
  12. Pan defrost them in grill pan with olive oil and chicken broth.
  13. Cover and let it become juicy for 3-5 min
  14. Turn and cook on both sides. Don't let it dry much.
  15. Remove the chicken breast.
  16. In the same grilling pan add more broth, Barbeque sauce, chives and sweet chilli sauce.
  17. Reduce for 1 min and sauce is ready
  18. Layer Cous Cous, top it with some bean legumes, chicken smoked breast and pour in sauce. Its done
