ABOUT Grilled Chicken and Couscous Salad RECIPE

This dish is extremely healthy and equally delicious , the Cous Cous is fragrant and very light which makes it perfect for summer lunches.

Ingredients Serving: 2

  1. 1/2 cup - dry Couscous
  2. 1 cup - red and yellow bell pepper ( chopped into cubes )
  3. Juice of 2 Lemons
  4. Salt to taste
  5. 1 tbsp - chilli sauce
  6. 1 tsp - dried oregano
  7. 1 tsp - chilli flakes
  8. 1 cup - boiling water
  9. For the chicken - 2 boneless chicken breasts cut into cubes
  10. Salt to taste
  11. 1 tbsp - olive oil
  12. 1 tbsp - lemon juice
  13. 1 tsp - Oregano
  14. 1 tsp - chopped garlic
  15. 1 tsp - red chilli powder


  1. First mix all the ingredients for the chicken and let it marinate for 5 minutes.
  2. Meanwhile prepare the couscous by mixing the chilli sauce, salt, oregano and chilli flakes into the boiling water.
  3. Add the water to the Couscous and cover tightly with cling film and let it sit for 5-10 minutes, till all the water has been absorbed.
  4. Once the chicken has been marinated, sauté it in a pan along with the bell peppers till its gets golden brown.
  5. Now open your couscous and fluff it up with a fork.
  6. Mix in the chicken, bell peppers, lemon juice and mint leaves and serve.
