Grilled Chicken and Couscous Salad

Ingredients to make Grilled Chicken and Couscous Salad

  • 1/2 cup - dry Couscous
  • 1 cup - red and yellow bell pepper ( chopped into cubes )
  • Juice of 2 lemons
  • salt to taste
  • 1 tbsp - chilli sauce
  • 1 tsp - dried oregano
  • 1 tsp - chilli flakes
  • 1 cup - boiling water
  • For the chicken - 2 boneless chicken breasts cut into cubes
  • salt to taste
  • 1 tbsp - olive oil
  • 1 tbsp - lemon juice
  • 1 tsp - Oregano
  • 1 tsp - chopped garlic
  • 1 tsp - red chilli powder

How to make Grilled Chicken and Couscous Salad

  1. First mix all the ingredients for the chicken and let it marinate for 5 minutes.
  2. Meanwhile prepare the couscous by mixing the chilli sauce, salt, oregano and chilli flakes into the boiling water.
  3. Add the water to the Couscous and cover tightly with cling film and let it sit for 5-10 minutes, till all the water has been absorbed.
  4. Once the chicken has been marinated, sauté it in a pan along with the bell peppers till its gets golden brown.
  5. Now open your couscous and fluff it up with a fork.
  6. Mix in the chicken, bell peppers, lemon juice and mint leaves and serve.

My Tip:

If you want to add any additional flavours to the Couscous, always add them to the water so that they can be fully absorbed.
