ABOUT Leafy salad with grilled chicken RECIPE

Now this is really a delicious bowl of salad which is filling and perfect for people on low carb diet. "LEAFY SALAD with GRILLED CHICKEN".. This is mixed leaf salad comprising of rocket leaves, baby spinach, lettuce , carrots, peppers mixed with a balsamic vinaigrette, served with grilled chicken on the side.

Ingredients Serving: 2

  1. Mixed salad leaves - 1 cup
  2. Shredded lettuce - 1/4 th cup
  3. Shredded carrots - 1
  4. For the vinaigrette:
  5. Olive oil - 4 tbsp
  6. Balsamic vinegar - 2 tsp
  7. Minced garlic - 2
  8. Freshly ground pepper - 1/2 tsp
  9. Chopped red chilly peppers - 1 tsp
  10. Salt
  11. For the grilled chicken :
  12. Chicken breast - 200 gm
  13. Garlic powder - 1 tsp
  14. Onion powder - 1 tsp
  15. Cayenne pepper powder - 1/2 tsp
  16. Pepper powder - 1/2 tsp
  17. Salt
  18. Olive oil

Instructions

  1. Marinate the chicken with the rest of the ingredients mentioned. Let this marinate for 30 minutes.
  2. Now take the vinaigrette ingredients in a bowl and whisk to mix them well.
  3. Put all the salad leaves in a mixing bowl and mix the vinaigrette into them, give it a good mix.
  4. Heat a griddle pan with little oil and grill the marinated chicken. Cook until both sides are done.
  5. Rest them for 10 minutes and cut them into slices. Place them along with the salad and serve.
